Grilled Potatoes

This is a quick and easy way to have a tasty Potato dish that can be cooked

on your barbeque while everything else is being prepared.

What Ingredients? A medium Potato per person and a medium Onion for every two Potatoes. A few pats of butter and some aluminum foil.

Scrub the Potatoes but do not peel. Lots of flavour and vitamins in Potato skins.

Slice the Potatoes into 1cm thick slices.

Slice the Onion into 0.5cm thick slices.

Arrange the Potato and Onion slices alternately on a large sheet of aluminum foil.

Dab several small pats of butter on top of the slices. You can fancy this up at this point by adding chopped chives or mint to the butter.

Seal the aluminum foil around the entire contents and place on upper rack of barbeque.

After 35 -45 minutes remove from barbeque, unwrap and serve.
